she is known to be an amazing cook, and i get to visit teach her. last year for christmas she gave me her family cookbook. it has EVERYTHING you could imagine and the recipes are tried and true and phenomenal.
some of you may know ... i don't cook. i know how to make, well, chicken. mac n cheese. blah blah ... i'm not a cooker. but hey, i wanna be.
so in our house we've instituted Lila Waite Wednesdays. very wednesday we try a recipe from her cookbook ... yesterday it was her banana bread.
1 C. butter
1 C. sugar
5 large eggs
3 C. mashed bananas
2 1/2 tsp. baking powder
1 tsp. baking soda
2 tsp. salt
1 1/2 tsp. cinnamon (optional)
4 C. flour
1 1/4 C. buttermilk OR 2 tbsp. vinegar and enough milk to make 1 C.
Cream butter and sugar well, gradually add eggs and mix well after each addition. Add bananas and mix. Sift together baking powder, baking soda, salt, cinnamon and flour. Fold into the butter mixture alternately with buttermilk, stirring with a wooden spoon just barely enough to combine. Over-mixing makes it tough. Bake in three well-greased 9" x 5" bread pans for 45-50 minutes at 350 degrees, until a toothpick comes out clean. Remove and cool on racks. Makes 3 loaves.

I served at the white house on the hill for 5 years with her and tasted her bananna bread, and corn bread (we called it corn cake because it was soooo sweet) every week. Her and Merlin are super awesome people and I just wanted to type merlin because who gives that name anymore. I take all chances I can! this is not Rach but im too lazy to log out.
